Grandma's Potluck Icebox Cake "Margaret Thinks She Invented This"

At the bottom of the recipe box, inside a folded piece of brown paper bag with a grocery list on the other side, evaporated milk, thread, "call Doris" was the recipe for the icebox cake. The handwriting isn't hers. She never said who gave it to her. I know better than to ask.

Margaret-from-the-choir has been making icebox cake for the third-Sunday potluck for years before Grandma arrived with hers and quietly ended the discussion. They have been perfectly civil to each other ever since, which in that particular social context means they are at war.
Grandma brought the same cake for twenty-two years. Not because she lacked creativity. Because she had found something that worked and had absolutely no interest in reinventing what wasn't broken. Margaret could innovate all she liked.
My first attempt used regular whipping cream and insufficient patience. By hour two of refrigeration, the whole thing had begun a slow structural collapse toward the left side. It tasted fine. It looked like a geological event. Grandma's holds its shape through church, through the drive home, and through however long the visiting runs after. Heavy cream. Whipped to proper stiff peaks. Architecture matters.
Grandma's Potluck Icebox Cake
Ingredients
600ml (2½ cups) heavy whipping cream, very cold
3 tbsp icing sugar, 1 tsp vanilla extract
2 packets plain chocolate digestive biscuits (or graham crackers)
2 tbsp strong black coffee, cooled
Dark chocolate for grating over the top
Instructions
Whip cream with icing sugar and vanilla to stiff peaks. Do not rush this. Under-whipped cream is the whole problem.
Spread a thin layer of cream on the bottom of a 9x13 dish. Dip each biscuit briefly in coffee, one second only, and lay in a single layer. Spread cream over the biscuits.
Repeat: biscuits, cream, biscuits, cream. Finish with cream on top. Grate dark chocolate over the surface.
Cover and refrigerate at least 6 hours. Overnight is better. Serve cold in squares. Do not transport without securing the dish. You know why.
